Quick And Easy Red Bean Buns

Tried to make some red bean buns after watching an anime that featured them. A samurai girl, Akatsuki, is very wholesome and likes this food.

I took a lot of short cuts: air fryer, pressure cooked the beans, didn’t soak over night, baking powder instead of yeast. It didn’t end up as smooth as some people’s red bean buns, but the family liked it.

You can speed things up even more by buying your own red bean paste, although I haven’t managed to find any.

Also there’s something fun about buying a bag of red beans.

I made these with gluten free flour and no eggs. This is usually a recipe for a dry, clumpy, sticky mess but it turned out ok.

Filling:

1 16 oz bag of red beans
3.5 cups of water
3/4 cup of oil
3/4 cup of sugar

My wife pressure cooked the beans with the water for 26 minutes.

Then I mashed them with a potato masher (not pureed, for texture). Toss them in with the oil and sugar into a skillet and low/medium heat for 25 minutes. Make sure to stir frequently.

Dough:

2 cups flour

1.5 cups of milk

1.5 cups sugar
8 tea spoons of baking powder
1 melted stick of butter

I cleaned off a part of the counter and pressed and rolled the dough over on it. Then I punched of fist size clumps of dough, flattened it out, placed the filling in the middle and slowly pulled the dough around to cover the filling and placed on parchment paper on a baking sheet.

I set the air fryer to 375 and let it go for 20 minutes. The edges and surface had some nice brownish marks, and the kids liked it.
